Sage, roasted garlic & orange oil

You know that delicious ‘dippy oil’ that appears with warm, freshly baked bread shortly after you order your food at The Cotley… well I’ve finally persuaded Dan to tell us the secret to what makes it so delicious. Anyway, if you fancy giving it a go…here is the scoop!

Ingredients

200g fresh sage leaves

400g neutral oil

2 garlic cloves

Zest of 1 large orange

Method

Bring a large pan of water to a rolling boil. Add the sage for 10–15 seconds, immediately transfer to iced water.

Drain and squeeze the sage very dry. This is important for getting a strong green colour.

Put the oil, garlic and orange zest into your blender and heat to around 70°C.

Add the sage and blend on high for 2–3 minutes, allowing the oil to reach around 75–80°C.

Leave the mixture for 10 minutes to allow the flavour to develop.

Strain & Pass through a very fine sieve or muslin/coffee filter.

Chill quickly once strained.
